ingredients:

  • 2 tbsp (28g) softened butter
  • 4 tbsp (50g) brown sugar
  • 1 egg yolk
  • 1/2 tsp (2.5ml) vanilla extract
  • 1.5 tbsp (10g) cocoa powder
  • 4 tbsp (30g) all-purpose flour
  • 1/8 tsp (0.6g) baking soda
  • 2 cookies and cream cookies (about 20g)
  • 6 tbsp (90ml) heavy whipping cream
  • 4 tbsp (40g) chocolate chips

instructions:

  1. Mix Butter and Sugar: Mix the softened butter with the sugar until homogenous.
  2. Add Vanilla and Egg Yolk: Add the vanilla extract and egg yolk, mixing again until well combined.
  3. Add Dry Ingredients: Add the cocoa powder, flour, and baking soda, then mix to form a dough.
  4. Fold in Crushed Cookies: Crush some Oreo or cookies and cream pieces and loosely add to the dough.
  5. Shape and Bake: Shape the dough into 1 large cookie or 2 regular-sized cookies. Bake at:
    • 325°F/160°C in an air fryer or
    • 350°F/175°C in an ovenfor about 11 minutes. Use a circle mold to fix the shape into a perfect circle if needed. Let the cookie cool completely.
  6. Make the Ganache Frosting: Melt 4 tbsp of heavy cream with 4 tbsp of chocolate in the microwave for 30-45 seconds. Let it cool slightly, then add the remaining 2 tbsp of cream and whisk over an ice bowl until stiff peaks form. (this took me 3-5 minutes, so use an electric mixer if you want)
  7. Pipe and Top: Transfer the ganache into a piping bag and swirl it onto the cooled cookie. Add crushed Oreo pieces, then finish with a gummy worm on top for a spooky touch!
